Carolina Caviar or Corn Salsa
Here’s a recipe for a corn salsa I had over spring break and which turned out to best any corn salsa I’ve had yet. It’s the ideal side-dish for summer days on picnics, cookouts, or just everyday snacks. Ingredients: 1 small red onion, chopped 1 large tomatoe, chopped 11 oz. white corn 4 green onions, chopped 1 cup parsley, chopped 1 tablespoon cilantro, chopped 2 cans (31 oz.) black beans, drained 2 garlic cloves, minced 16 oz. italian dressing 1 green bell pepper, chopped Directions: 1. Stir ingredients together in a large bowl and chill for 8-24 hours. 2. Serve with tortilla chips or atop a fresh salad. Enjoy!
