Recipe Review: Garden Betty

When it comes to cooking and baking, I’m capable, but I tend to need inspiration. Thanks to the internet, I have a plethora of recipes at my fingertips for such aid. After searching for homemade noodle recipes, my friend Abby Joy and I stumbled across Garden Betty. Not only were the noodles a success, but after further investigation, I became pleased with the whole of Linda’s recipe archive. Here is the progressive flow of my most recent (and only second attempt) to imitate her herb pasta recipe along with simple tomato sauce that my sister, Lilly and I concocted.

The herbs are a combination of sweet basil, cinnamon basil, and thyme, finely chopped.

Tomato Sauce Recipe

Ingredients: 

2 large big boy tomatoes

1 1/2 cups cherry tomatoes

1/4 red onion, halved and sliced.

Sweet and cinnamon basil, partially chopped

Some sprigs of thyme

3 medium cloves of garlic, julienned

Olive oil

Salt to taste

1/2 small lemon, sliced

Directions:

1. Sauté the onions and garlic in olive oil, keep on a low heat.

2. Cut one of the large tomatoes in half and all the cherry tomatoes in half and add to the onions and garlic. Continue to cook on low heat. Pour 3/4 of the sauce in the blender and puree, then pour back into pan. Stir in the basil and thyme.

3. Slice the remaining tomato and add to the sauce, simmer on low heat.

4. Add the lemons and salt to taste and keep on low heat until ready to serve.
